Who We Are. What We Offer.
Hillsboro Farm Country Market is a family-run farm market on Hillsborough Road in Hillsborough Township, New Jersey. We grow and carry a wide range of tomatoes and hot pepper varieties, along with sweet corn, squash, eggplant, lettuces, fresh vegetables, and seasonal fruit.
Inside you'll find house-made ice cream, fresh baked pies and breads, local dairy and honey, and pantry staples like jams and dressings. In the fall we carry cider, pumpkins and cornstalks. Every November we take orders for Thanksgiving pies, baked to order. Then in December, we close out our season with Christmas trees and wreaths for the holidays.
Tomatoes
From mid-July through September, our tomato tables are something to see. Beefsteak, heirloom, cherry, plum, and tomatillo varieties come in colors and shapes that change week to week as the season peaks, including Brandywine, Green Zebra, Black Krim, Cherokee Purple, and Mortgage Lifter.
Homemade Ice Cream
We make our ice cream right here in small batches using the Johnson family recipe. Every flavor starts with the same vanilla base, hand mixed and frozen one batch at a time, with mix-ins folded in by hand rather than dumped from a bag. A rotating lineup of flavors year round, plus seasonal additions like Pumpkin and Peppermint Bark.
Fresh Vegetables
What you find on our shelves changes with the season. We grow eggplant, basil, summer squash, kale, Swiss chard, cucumbers, sweet corn, sweet and hot peppers, potatoes, onions, and garlic right in our fields, including a wide range of hot pepper varieties from mild cherry peppers up to Carolina Reaper.
Fresh Fruit
Our fruit tables fill in through the growing season with peaches, nectarines, plums, apples, and pears. Blueberries, strawberries, and blackberries come in their own windows, and watermelon and cantaloupe carry us through the heart of summer. What is ripe changes week to week, the way it does on a working farm.
Pies and Baked Goods
We bake pies all season long, not just at Thanksgiving. Apple, blueberry, cherry, peach, strawberry rhubarb, and more come out of our ovens alongside fresh bread, from a classic French baguette to sourdough and rosemary. Crumb cake, cookies, and cider donuts round out the case, baked fresh daily.
Fresh Food Market
Beyond what we grow, we bring in meat from Griggstown Farm and Lima Family Farms, milk and cream from Apple Valley Creamery, and fresh mozzarella and burrata from Lebanon Cheese Company. Add our own honey from on-property hives, jarred pantry goods, and local coffee, and you have a full stop for the week's groceries, all sourced from farms we know.
Fall Harvest and Seasonal
When fall comes in, so do the corn stalks, gourds, decorative pumpkins, and mums that mark the season. Apple cider and cider donuts show up right alongside them, the same seasonal lineup our customers look forward to every year as the weather turns.
Christmas and Holiday
We cut our own Christmas trees and put together wreaths, garland, and handmade boxwood trees for the holidays. Poinsettias, grave blankets, and gift baskets round out the season, a tradition on this farm that goes back generations.
Hay and Straw
We carry Timothy hay, grass hay, and mulch hay, sold separately from the main market. Delivery is available. Contact Kyle Van Nuys directly at 908-310-8631 to check availability and arrange pickup or delivery.
Local Handmade Goods
Alongside what we grow and bake, we set aside shelf space for handmade goods from local makers. What is on display changes as vendors come and go throughout the year, so there is always something new to find.
Fresh Flowers
Fresh cut flowers and potted plants are available seasonally. Bouquets, sunflowers, mums, tulips, wildflowers, geraniums, and pansies make a beautiful addition to any home.

Our History
Hillsboro Farm has been owned and farmed by the Van Nuys family since 1867, making it the oldest active business in Hillsborough Township. The land is permanently preserved and can never be developed.
Doug Van Nuys grew up on the farm and started small, growing sweet corn and vegetables and setting out a self-serve wagon along the driveway in 2000. Katie helped build it into a full-time market self-serve stand, open seven days a week.
The market business was formally established as Hillsboro Farm Country Market in 2014. With the design help of Lynn, the current building opened in 2017, marking the farm's 150th anniversary.
Today the business is still run by family, growing and selling the same way the family always has, close to the land and close to the customer.
